Coffee region: Cauca, Colombia

Cauca, Colombia

Cauca has established itself as one of the most prestigious coffee-growing regions in Colombia. Its high plateaus, volcanic soil, and stable year-round climate create a perfect environment for producing coffees of great finesse and consistency.

Altitude: Between 1,400 and 2,000 meters, with slopes and microclimates that promote slow and uniform cherry ripening.

Climate: Protected from the Pacific humidity and southern trade winds thanks to its geography, it maintains cool temperatures and regular rainfall that ensure stability and quality.

Varietal: Various

Castillo, Colombia, Caturra, Typica, Bourbon and Tabí.

This lot brings together the work of small producers from Popayán, who grow traditional and modern varieties.

Castillo and Colombia: more recent varieties, selected for their stable productivity and rust resistance, which allow coffee growers to ensure consistent volumes.
Caturra, Typica and Bourbon: traditional varieties, more susceptible to diseases, but valued for their cup quality and cultural heritage.

Tabí: a hybrid that seeks to combine the best of both worlds: sensory quality and resistance.

Altitud: 1.400 - 2.000 msnl

Process: Washing

Fermentation in process Racafé Washed

To produce this coffee, only ripe cherries are carefully selected, hand-picked to ensure uniformity in flavor. After harvest, the cherries are depulped; the fruit is removed, leaving the beans still covered in mucilage. These beans ferment in water tanks for 12 to 48 hours, depending on the temperature and how the fermentation parameters evolve in each lot.

Once fermentation is complete, the beans are washed with clean water to remove any remaining mucilage and impurities. Afterwards, they are spread on raised solar beds for sun-drying, with frequent turning, until they reach the optimal moisture level.

Roast: Omni

Roast Profile for Espresso and Filter

The omni roast develops the sweetness of the bean without overshadowing its natural acidity.

This profile allows the coffee to develop in all extractions.

This lot is sourced, evaluated, and marketed by Racafé, one of Colombia's most important exporters. Through their CRECER standard, they guarantee quality, traceability, and sustainability at every stage.

From cherry selection to export, Racafé's work connects coffee growers from Cauca to the world, ensuring that each lot is a worthy representative of the tradition and character of its region – in the case of this lot: Popayán.

Additionally, they have the 3-37 Product Development and Creation Center, a space dedicated to continuous learning and knowledge generation throughout the coffee value chain. There, processes are researched, tested, and perfected. This vision aims to drive innovation and ensure coffees that combine technical excellence with a strong social and environmental commitment.
