Extraction Guide
V60 Filter
For drip coffee (filter), we recommend a ratio of 1:16, which means using 1 gram of ground coffee for every 16 grams of water. This ratio promotes balance in extraction.
Coffee: 12 g
- Grind: Medium-fine (texture similar to beach sand)
Water: 200 g
- Temperature: 92-94 °C
Instructions:
- Heat the water and wet the filter completely before adding the coffee.
- Pour 50 g of water over the 12 grams of ground coffee to saturate them completely and wait 40 seconds for the bloom.
- Make 3 pours of 50 g each every 30 seconds, pouring the water in circular motions, finishing slowly in the center.
- Allow a drainage time of 45 seconds from the last pour.

It all starts with the clay
Origami's supplier is a local company, located just a 10-minute drive from the factory, which transforms raw materials (stones, kaolin*, etc.) into clay plates, which they then deliver to Origami. This step is crucial, as the raw material determines the quality and robustness of the final products. In addition, they have their own R&D team, responsible for finding the best recipes according to the properties of their materials.
Their famous dripper
Origami was founded in 2014 by two brothers with the idea of creating the best accessories for baristas. The brand became known in the specialty coffee scene with the creation of their famous dripper, launched in 2016. The idea arose from the desire to develop a filter holder compatible with both Kalita Wave filters and conical filters.
Traditional know-how and new technologies
The brothers grew up in their father's Koyo Toki ceramics factory, located in Toki, Gifu Prefecture, which produces drippers and cups. Although part of the production is now robotized, many tasks are still done by hand. They produce their items on demand, avoiding overproduction. The factory even has its own coffee shop and showroom, created to promote local porcelain craftsmanship and showcase the work of more than 300 Mino ceramic artisans
