Extraction Guide
Pour-over
For pour-over (filter) coffee, we recommend a ratio of 1:16, meaning 1 gram of ground coffee for every 16 grams of water. This ratio promotes balanced extraction.
Coffee: 12 g
- Grind: Medium-fine (texture similar to beach sand)
Water: 200 g
- Temperature: 92-94 °C
Instructions:
- Heat the water and wet the filter completely before adding the coffee.
- Pour 50 g of water over the 12 grams of ground coffee to saturate them completely and wait 40 seconds for the bloom.
- Make 3 pours of 50 g each every 30 seconds, pouring the water in circular motions, slowly finishing in the center.
- Allow a drainage time of 45 seconds after the last pour.
CHEMEX
Led by a brother and sister who grew up in the heart of the factory, Chemex is a team of 35 passionate individuals committed to preserving the environment.
Famous for its iconic style and ingenuity, Chemex was invented in 1941 by chemist and inventor Peter Schlumbohm. Its design, unchanged for 80 years, has become a symbol of American design, transcending generations and borders. The visual elegance of the iconic Chemex coffeemaker has earned it a place in the permanent collections of prestigious American museums such as MoMA, the Smithsonian, and the Philadelphia Museum of Art.
The appeal of Chemex lies not only in its elegant simplicity, but also in the enjoyable experience of using it and the end result: a cup that highlights the subtleties of the terroir and reveals every facet of the coffee. Its paper filters, heavier and less porous than standard ones, retain sediments and most of the oils from the beans. The result? A clear and clean filtered coffee, with a smooth extraction, aromatic complexity, and exceptional clarity. Its functionality has been recognized by both scientific communities and coffee lovers alike.
